Chicken, tomatoes & pine nuts pasta

For 2 servings

  • 200g diced chicken breast
  • 100g GustaMente GF Pasta
  • 2 Garlic Cloves
  • Handful Baby spinach
  • Handful Rocket
  • Pine nuts
  • Diced tomatoes (I use canned)
  • 2 tbsp of olive oil
  • Salt & Pepper

Time wasted on making an awesome meal

  • Prep: ~10
  • Cooking: ~30 min
  • Drinking wine: 10 mins
  • Total: Less than an hour


Bring to boil a saucepan of water. Put the GustaMente gluten-free pasta and boil for around 4 minutes. If you are using a different pasta follow the instructions on the packaging.

When cooked, drain the water wash the pasta and put back in the warm pan. Add some of the olive oil and stir and leave to rest.

While the pasta is resting heat a frying pan with the rest of the olive oil. Add the onions and garlic and stir until light brown. Add the diced chicken with some black pepper and salt and stirfry until the chicken is golden (appx. 5 min). When cooked reduce the heat to minimum and add the diced tomatoes. Stir for a couple of minutes and add the mix to the pasta in the saucepan. Stir for another couple of minutes on medium heat until all the pasta is covered.

Serve in a pasta bowl and add the spinach and rocket.

I also like to add some parmesan.

…..and wine, don’t forget a glass of wine ;). Pour that in your belly, not the pasta
